3. FEED THE HOMIES - BTS
For the longest time i’ve been dreaming of being able to cook in a proper kitchen on an industrial grill, Weird goal for a designer but its just something thats always seemed impossible for me to achieve. So before Lockdown 4.0 on a crispy winter night in Melbourne, i got down to St burgs to go have Drinks with Dan the Durger King, alongside a bunch of other old and new friends.
As soon as i walked up the stairs, i’m greeted by the oldest homie Ponch who i hadn’t seen properly in YEARS. Ponch, Will & Ajay brought all their video gear and were getting ready to start filming. This is where i knew tonight was going to be a lot more fun than i first anticipated.
Joe of 23 John St, has been making ready made Sisig packs which he brought along on the night so i knew it was going down. Sisig was something i’ve been wanting to eat for a while as i’ve been eating and attempting to cook more Filo food to get to know my wife’s culture a little more.
As soon as the kitchen was freed up after service, we wasted no time. Knives were chopping, the grill was sizzling and we were hungry. Dan was making some new gems he had been working on, Joe got his famous famous Sisig tacos sorted and i made a Pebre which was literally put on everything and a fusion chilean Churrasco. By the end of the night we had created at least 10 new dishes and we all carried our selves out of there. Seriously one of the best nights i’ve had in a while, big ups to Dan for hosting us all!
